Don’t get me wrong, I do love some me Southern style green beans — you know, the ones cooked for hours over a stove, usually swimming alongside a healthy portion of pork fat?
However, while studying in Paris, discovered for the first time in my life what actual green bean/”haricots verts” are supposed to taste like: crisp, bright, + fresh.
Can we also mention that they take less than 10 minutes to cook — and the ones from the freezer are perfect! In fact, I prefer the frozen Trader Joe’s “French Green Beans” – they can go from freezer to table in no time flat. I ALWAYS keep them on hand for a quick + healthy side dish.
Lemon-Garlic Haricots Verts (French Green Beans)

- ¼ cup butter, melted (or ghee, if dairy free)
- 16 ounces fresh or frozen haricots verts (French green beans)…I like the frozen ones from Trader Joe’s
- 2 cloves garlic, minced
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper
- Zest of one lemon
Instructions
Melt butter in large saute pan on medium low, careful not to burn.
Toss in haricots verts and cook for 2-3 minutes until crisp-tender. (Don’t over cook – they are meant to be served with a slight crisp.)
Add garlic, salt, pepper + finish with fresh lemon zest.
Notes
