    Vanilla-Lime Gluten-Free Donuts

    I’ve been experimenting with several varieties of baked donuts using cake mixes. While my family does not follow a gluten-free diet, I know many families who do — who benefit greatly from a gluten-free diet. I stumbled upon a gluten-free cake mix from Aldi the other day, and decided to give it a try. First stop, I wanted to create a vanilla cake donut with a hint of lime.

    I don’t know what I was expecting – maybe a stodgy, dense, flavorless cake, but I was quite wrong. The cake was moist, soft, and spongy, with a light vanilla flavor. I don’t think if I would have guessed it to be gluten-free unless I had known in advance.

    So, back to my cake-mix donut experiment….Cake donuts are just that – cake. I could have used a variety of complicated gluten-free ingredients, but instead, was able to achieve a delicious donut simply by following instructions on the cake box. I added just a few ingredients to make it extra special.

    Here is the recipe for the Gluten-Free Vanilla Lime Donut (using a cake mix!):

    Gluten-Free Vanilla Lime Cake Donuts

    Ingredients

    • Gluten-Free Vanilla Cake Mix (I used the one from Aldi, linked in text above)
    • 3/4 cup milk*
    • 1/2 cup butter (softened)*
    • 2 tsp. vanilla extract*
    • 3 large eggs
    • 2-3 drops of green food coloring
    • Zest + juice of one lime
    • ----
    • 1-1/2 cups powdered sugar
    • 2 tbsp. milk
    • 2 tsp. vanilla
    • Lime zest

    Instructions

    Preheat oven to 350 degrees. Coat donut pan in cooking spray and set aside.

    Follow the instructions on the box cake mix. (I placed an asterisk by the ingredients that were listed in the box cake mix I used, which may be different than the cake mix you use. Follow the instructions on your box.) Mix the first 5 ingredients well. First zest the lime with a microplane or zester, and then juice the lime. Add both zest and juice to cake batter.

    Spoon batter into greased donut pan, careful to only fill each "donut" half-way. They will rise significantly when baked. Cook for the amount of time listed on your box; it should probably range between 23-27 minutes, but please refer to your box for specific cooking times.

    Once cooked, remove from oven and donut pan and allow to cool completely on cooling rack.

    Meanwhile, combine powdered sugar, milk, and vanilla together in mixing bowl. Mix well until smooth. Submerge donut tops in glaze, allow excess to drip off, and place again on cooling rack. While glaze is still slightly wet, zest lime and on top of donuts. The zest adds a punch of lime flavor without the tartness.

    Eat donuts immediately or store in air-tight container for up to 2 days.
