Red onions can sometimes be a bit abrasive and overpowering to the palette, but these 5-Minute Pickled Onions are another story. They add a bright, contrasting flavor to rich foods, like stews or braised meats. The are also delicious on top of pizza, tacos, or sandwiches. Part of pickled onions’ allure is their bright pink color. And you can make them in 5 minutes with ingredients you probably already have on hand.

Try topping Korean Beef Tacos with pickled onions. It adds a much-needed, bright flavor (and color!) contrast to the rich, unctuous beef.

5-Minute Pickled Onions

Serves: 8-10 Cooking Time: 5 minutes

Ingredients

  • 1 medium red onion
  • 2 cloves garlic, peeled
  • 3 tbsp. sugar
  • 1-1/2 tbsp. kosher salt
  • 1 cup white vinegar

Instructions

Slice red onion very thin, preferably on a mandolin. If you don't have a mandolin, slice in thin, even strips. Place onions in mason jar, or similar jar/container. Add garlic to jar and set aside.

In a small sauce pan, combine sugar, salt, and white vinegar. Bring solution to light boil and stir until sugar and salt dissolves. Turn off heat and allow to cool slightly.

Pour cooled vinegar solution in mason jar, careful to submerge all onions and garlic. You can serve immediately, or store in fridge for up to 1 week.
