Easy Blueberry-Citrus Crisp

Blueberry-Crisp is a traditional, and quintessentially American dessert. Of course, the deep-blue color evokes images of the American flag. In addition, blueberries are native to North America and have been a part of indigenous and American cuisines for centuries.

This Easy Blueberry-Citrus Crisp is the perfect sweet treat to celebrate July 4th, or any other patriotic holiday! This particular recipe is also gluten-free. It incorporates everyday fridge and pantry ingredients, so it’s one of those desserts you can throw together in a pinch.

I love combining citrus and blueberries in desserts. In my opinion, blueberries can taste a little bit flat on their own. What I mean is that blueberries only have one flavor – sweet – especially when they are cooked. However, adding citrus brightens and elevates the flavor, as it balances the sweet blueberries with tart and sour notes. You can use oranges, as I did in this recipe, but lemon would be delicious, too! Make sure you use both the zest and juice of whatever citrus fruit you decide to use. (The best microplane for zesting citrus is this one — I use it almost everyday and it’s easy to clean, too!)

  • Rolled oats
  • Brown and granulated sugar
  • Vanilla extract
  • Kosher salt
  • Corn starch

Ingredients

  • For the Filing:

  • 6 cups of frozen blueberries
  • 1/4 cup of granulated sugar
  • 2 tbsp. cornstarch
  • Zest + juice of 2 oranges
  • Pinch kosher salt
  • For the Crisp Topping:
  • -
  • 2 cups rolled oats
  • 1/4 tsp kosher salt
  • Zest + juice of one orange
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar
  • 1/3 cup unsalted butter, cubed

Instructions

Preheat oven to 350 degrees.

Combine all of the filling ingredients together in a large bowl. Stir until sugar and cornstarch are well combined. Pour into a deep, oven-safe dish and set aside.

Combine first 5 topping ingredients together in a large bowl. When ingredients are thoroughly combined, cut butter into crisp ingredients with a fork. Sprinkle topping onto fruit.

Place in oven and cook for 1 hour. Topping should be slightly browned and fruit should be hot and bubbly underneath.
