Healthy Cobb Salad

- 1/2 lb. bacon
- 4 cups salad greens of choice
- 2 cups rotisserie chicken breast, cubed
- 1-2 plum tomatoes
- 1 ripe avocado, diced
- Apple Cider Vinaigrette Dressing

Preheat oven to 400.

Place bacon on metal rack/sheet pan in oven and cook for 15 minutes until brown and crispy. Once cool, break into bite-sized pieces.

Assemble salad. Fill bowl with greens and top with chicken, tomatoes, bacon + avocado. Finish with Apple Cider Vinaigrette (see recipe link above.)
