Meatballs with Chimmichurri

Serves: 4-6 Cooking Time: 1 hour

Ingredients

  • 1-1/2 lbs. ground sirloin
  • 1 egg, beaten
  • 1/4 cup breadcrumbs (plain)
  • 3 cloves garlic, minced
  • 1-1/2 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper (optional)
  • 8" wooden skewers
  • Cooking Spray
  • Handful chopped cilantro

Instructions

Preheat oven to 400 degrees.

Coat large sheet pan with cooking spray.

Mix first 8 ingredients in large bowl. Combine all ingredients but do not over mix.

Form balls about 1-1/2" in diameter. Place 4-5 meatballs onto each wooden skewer.

Place skewers on sheet pan.

Cook for 12-15 minutes until cooked through and slightly browned on outside.

Top with chopped cilantro

Notes

Serve with zesty, bright Chimichurri Sauce.
