Orange Vanilla Nice Cream

Summertime is right around the corner and with three kids at home, I need to level up my snack game. They are 12, 9, and 5 and are going to eat me out of house and home! As the kids get older, and have older sibling influences, it’s harder to encourage them to eat healthy snacks. I think they would eat chips and candy all day if I let them.

So how do you strike a balance between healthy-ish food and the junk they want to eat without breaking the bank? I definitely don’t have that all figured out, but it’s been fun playing with ingredients in the kitchen. I’m hoping to strike that precarious balance between simple, healthy, and delicious. This is the first version of Nice Cream I’ve tried, but I think I’ll try it with other flavors too – like strawberry, raspberry, and maybe even a chocolate peanut butter version.

As for this particular Nice Cream inspiration, I live in Atlanta where there is an iconic fast food restaurant called The Varsity. They are famous for their burgers and hotdogs, but mostly for their orange-vanilla flavored milkshake called the Frosted Orange. They are quiet good, but I think people really love them for their nostalgia. If you’re ever in Atlanta, you’ll need to give it a try!

This loosely based Frosted Orange is a little less sweet, is vegan, and dairy-free. And it’s “Nice” because it only uses clean, natural ingredients. Plus, who doesn’t love the classic orange-vanilla combo? It’s creamy, bright, tart and tastes like Summer!

Orange-Vanilla Nice Cream

Print Recipe
Serves: 4 Cooking Time: 2 hours (freezing time)

Ingredients

  • 1 can coconut cream (I use Trader Joe's)
  • 1 cup fresh squeezed orange juice
  • 1/4 tsp vanilla
  • 1 tbsp honey

Instructions

Pour all ingredients into a blender and pulse until well combined. Pour mixture into shallow, freezer-safe dish. Cover and freeze for about 2 hours. Scoop with ice-cream scoop and serve immediately.

Alternatively, you can pour mixture into ice cube trays and freeze. Once frozen, pop out of holder and place in freezer safe plastic bag. Add a couple cubes to your favorite smoothie to give it a bright, creamy flavor.
