Pulled Pork Sandwiches

- 1 pork shoulder
- 3 tbsp canola oil
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 2 cups low-sodium chicken stock
- Your favorite BBQ sauce
- Your favorite pickles
- 6 hamburger buns
Instructions
Coat pork shoulder in oil, salt + pepper. Heat Dutch oven on medium-high heat. Place pork in pot and sear on all sides until brown. Pork should not be fully cooked at this point.
Slowly add chicken stock, careful to scrape the bits off the bottom with a wooden spoon. That's what makes it tasty. Add garlic powder + onion powder. Cover, reduce to low and simmer for 4-6 hours. Remove from heat, cool, and pull apart pork. Should be tender enough to pull apart easily with a fork.
Generously heap shredded pork into hamburger buns and top with your favorite BBQ sauce + pickles. Serve alongside Sweet Potato Fries.
Notes
You can use a Crock Pot instead of a Dutch oven, but I recommend searing the pork first.
