How many long years have I lived thinking carbs were the enemy to a healthy diet? Even whole food carbs, like potatoes, sweet potatoes, and fruits were off limits in my mind. Thankfully, I have come to my senses and regularly enjoy these delightful Sweet Potato Bites.
While I now enjoy ALL the food groups, mostly whole foods AND treats on occasion, I’ve learned certain whole food carbs pack a punch of nutrition and flavor. These foods fuel my body well, so I don’t crave the junk. One of those staple carbs I like to have on hand are these Sweet Potato Bites.
I like to make these Sweet Potato Bites in bulk while meal prepping early in the week. You can eat them right away, or store them in the fridge and reheat in oven later in the week. You can enjoy them in a wide variety of ways — as a dinner side with your favorite protein, OR, for example, in a bowl, topped with sautéed greens, a fried egg, and Sriracha sauce. They are delicious on their own, but are the perfect, whole food carb BASE. There are so many ways to enjoy these nutritious bites without growing tired of them.
Preheat oven to 425. Coat sheet pan with 1 tbsp. olive oil. Wash sweet potatoes well. Slice potatoes into 1/2" size chunks. Place sweet potatoes in bowl, along with remaining 1 tbsp. olive oil, kosher salt, and onion powder. Toss potatoes to ensure even coating of ingredients. Spread out potatoes on sheet pan. Place in oven and cook for 25 minutes. Remove from oven, toss potatoes with spatula, and return to oven for another 20 minutes, until potatoes are crispy on outside. You can eat right away, or place cooled bites in fridge and reheat later! Reheat at 425 for about 10-12 minutes. Sweet Potato Bites
