Ingredients

  • 2 lbs small red potatoes, quartered
  • 1 tbsp olive oil
  • 1-1/2 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper

Instructions

Preheat oven to 425 degrees.

Coat quartered potatoes in olive oil.

Spread out on sheet pan, sprinkle with salt, garlic powder, onion powder + pepper.

Roast for 25 minutes, flip and roast for another 5-10, until golden brown.

Top with fresh herbs.
