Mojo ShrimpPrint Recipe
- Zest + juice of 2 oranges
- Zest + juice of 1 lime
- 5 cloves of garlic, finely minced
- 1/4 cup olive oil
- 1 tsp cumin
- 1 tsp kosher salt
- 1 tsp dried oregano
- 1-1/2 to 2 lbs. frozen shrimp
Preheat oven to 400 degrees.
Combine all ingredients in large bowl. Allow shrimp to set in marinade for 15 minutes or up to 8 hours in fridge.
Line large sheet pan with aluminum foil; spread out shrimp and pour any remaining marinade onto shrimp.
If shrimp are still mostly frozen, cook for 12-15 minutes until shrimp turns from translucent/grey to an opaque pink. If shrimp are thawed, cook for 6-8 minutes until opaque pink.
