- 1 lb petite potatoes (red, yellow, purple)
- 2 tbsp olive oil (divided)
- 1-1/2 tsp kosher salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
Place potatoes in large pot of water and cook on high until it reaches a rolling boil. Boil for 20 minutes until fork tender.
Drain potatoes in colander and allow to cool.
Coat bottom of sheet pan with 1 tbsp olive.
Preheat oven to 425 degrees.
Place cooked potatoes in pan and smash flat with a metal spatula until they're about about 1/2" thick. Drizzle with the other tbsp of olive oil. Sprinkle with salt, garlic + onion powder, and pepper. Cook for 20 minutes.
Remove from oven, flip potatoes and cook for another 20 minutes until crispy and brown.
