Hawaiian Shredded PorkPrint Recipe
- 3 lb. pork loin (or pork shoulder)
- 1 cup pineapple juice
- 1/3 cup soy sauce
- 2 inches ginger, cut into 1" pieces
- 3 tbsp liquid smoke
- Handful cilantro, chopped
Combine all ingredients (except cilantro) into slow cooker and set to low.
Cook for about 6 hours. Remove large pieces of ginger. Once fully cooked, shred pork + top with cilantro.
This pork makes an excellent lettuce wrap! Or a delicious taco. I recommend using toasted corn tortillas for tacos. Top with Spicy Mango Salsa for a delicious island taste!
