Mojo Shrimp

Shrimp is one of those proteins you want to keep on hand in your freezer, ready for a quick, delicious meal. This Mojo Shrimp recipe has become a weeknight favorite around here. The citrus, garlic + herb combo gives is a fresh, bright + savory profile that the whole family will love.

Mojo Shrimp

Serves: 4-6 Cooking Time: 20 Minutes

Ingredients

  • Zest + juice of 3 oranges
  • Zest + juice of 2 limes
  • 5 garlic cloves, minced
  • 1 tsp kosher salt
  • 1 tsp dried oregano
  • 1/4 cup extra virgin olive oil
  • 1 lb. frozen shrimp, peeled + deveined
  • Fresh cilantro, chopped

Instructions

Combine zest, juice, garlic, salt, oregano + olive oil in a large, zip top bag and mix well. Place frozen shrimp in bag and let sit out of fridge, in marinade, for about 20 minutes.

On stove, place large saute pan on medium-high heat. Pour partially thawed shrimp and marinade into hot pan. Cover pan, but stir occasionally until shrimp is pink + opaque, about 10 minutes. Garnish with cilantro + serve.

Notes

Serve with Avocado-Cilantro-Lime Sauce
