Spice Dusted Sweet Potato Medallions

- 4 medium sweet potatoes
- 1 tbsp olive oil
- Cooking spray
- 2 tsp kosher salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 tsp ancho chili powder
Instructions

(Day off or up to a couple days in advance) Preheat oven to 425 degrees. Wrap sweet potatoes in aluminum foil and place in oven.

Cook for 1 hour, or until soft. Cool. (Place in fridge if cooking later.)

Coat large sheet pan with olive oil.

Slice sweet potatoes into 1/2" thick medallions.

Place medallions on oiled sheet pan. Flip so both sides of potatoes are oiled.

Sprinkle salt, pepper, and spices on top of sweet potatoes.

Cook for 15-20 minutes until slightly crisp on the bottom.
